Instant Pot Beef Tips

I'm always looking for good meals that can be on the table in about an hour including preparation and cooking time. I did some digging through my collection of recipes and came across this recipe for Instant Pot Beef Tips that I had made several times before. It has an almost 5-star rating from 85 votes when I just looked, so that tells me others are just as happy with it as I was.

As for the Steak Seasoning that's listed, we make a large batch (probably 4-5 times what's listed in the recipe) of something that's like a Steak Seasoning Recipe used on the steaks at Outback Steakhouse. We use it in recipes that call for steak seasoning, put it on steaks to season them, and even use it on chicken (when we do, we just add some brown sugar to it). We keep it stored in a container and it's always ready to go when we need it.

My suggestion if you plan on making this - talk to your butcher in the grocery store where you buy your meat. I always ask to have the meat cut up in advance for the recipes I plan on making. It makes meal preparation much easier! When I know I'm going to make this, I buy my beef sirloin roast and I ask the butcher to cut it up into 2" cubes for me. I shop at Publix and they have always been willing to do this. Hopefully, your store's butcher will be as nice to you as ours has been to me!

Another thing I always make sure I have to simplify meal preparation is a jar of Spice World Minced Garlic. On the jar, it says that 1/2 teaspoon equals a clove of garlic in a recipe. I like a lot of garlic, so I tend to heap the teaspoons! Instead of using the beef bouillon like the recipe initially suggested, I prefer Better Than Bouillon Roasted Beef Baste because it adds a lot more flavor to your meals.

Ingredients:

For the seasoning rub for the beef tips:

  • 3 tablespoons flour
  • 2 teaspoons steak seasoning (use what you have and like or follow the recipe above)
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper

For browning the beef:

  • 2 pounds beef sirloin roast, cut into 2" cubes
  • 2 tablespoons olive oil

For the gravy:

  • 6 tablespoons butter
  • 3 onions, chopped
  • 1 heaping tablespoon of Spice World Minced Garlic (or 6 large garlic cloves, minced)
  • 8-ounce container of sliced white mushrooms, rinsed (optional)
  • 1 cup of red wine
  • 2 tablespoons of Better Than Bouillon Roasted Beef Baste
  • A 32-ounce container of Progresso beef broth
  • 3 tablespoons of Worcestershire Sauce
  • 1 tablespoon thyme leaves (or ground thyme if you don't have this)

Directions:

Make the seasoning rub and brown the meat:

  1. In a gallon-sized baggie, mix together the seasoning ingredients.
  2. Set your Instant Pot on the Saute setting.
  3. Place the beef cubes into the baggie with the seasoning mixture. Shake the baggie to coat all of the meat with the seasoning.
  4. Once the pot is hot, add the oil. Add half of the beef cubes in one layer. Brown the meat on both sides, but don't the meat through. Remove the first half of the meat. Repeat with the second half of the meat. Remove the meat when finished.

Make the gravy:

  1. Add the butter and onions to the pot. Stir and scrape the bottom of the pot, getting up all of the browned bits.
  2. Add in the garlic, stir and cook for 1 minute.
  3. Add in the remaining gravy ingredients (mushrooms, red wine, Better Than Bouillon Roasted Beef Base, beef broth, Worchestershire sauce, & thyme). Stir to blend the ingredients.
  4. Cancel the Saute setting on the Instant Pot.

Cook the meal:

  1. Add the browned beef tips to the pot. Close the lid and seal it.
  2. Press the Pressure Cook (or Manual) button. Set the timer to 25 minutes.
  3. Once the cooking time finishes, leave the pot to sit for a 10-minute natural release.
  4. Turn the steam release nob to the venting position and release the remaining pressure.
  5. Open the pot. Stir and taste the gravy, adjusting with salt and pepper if necessary.
  6. Optional: if the gravy isn't as thick as you'd like it to be, in a cup, whisk together 6 tablespoons of cornstarch and 6 tablespoons of cold water until dissolved. Turn on Saute again and when the sauce begins to simmer, stir in the cornstarch slurry. Stir until thickened, and then turn off the pot.
  7. Serve over your choice of mashed potatoes, rice, or noodles.

The original recipe for this was very good, but each time I've made it, I've made adjustments and each seemed to improve it. The biggest difference between the original recipe and the one I follow now is the amount of gravy. I felt that if I followed the original recipe, I didn't have enough gravy for serving the meat over mashed potatoes, rice, or noodles. I tripled the gravy and adjusted the flavors and liked it much better.
